Paris Séduction Hautes Glaces Caryops

Caryops is a botanical term that designates a dry indehiscent fruit, typically the fruit of grasses: the grain of cereals. It is conjugated here in the plural because this whisky is a malted composition created from more than 150 whiskies, each resulting from the work of a specific cereal, barley, rye, einkorn, spelt and oats. Caryops is thus the fruit of 15 years of exploration: of the specific tastes of the different cereals that Hautes Glaces works as well as of the way to assemble this diversity in order to create a unique and complex whisky, a rich and harmonious aromatic dialogue.

An immediate complexity emerges. The unexpected is often linked to rarity. The rarity here is the two varieties of spelt that immediately emerge on the nose. Surprising scents of citrus fruits and dried flowers. An astonishing nose because it is totally off the mark and off the radar, outside of any commonly accepted references. We are going to dance enthusiastically, without knowing the music.

Proof by 5 and in strata. All cereals find their place. If spelt stands out on the nose, oats subtly lead us towards warm forage notes of late summer. And under this heat, the softness and sweetness of our barley waltz, slide and turn in couple with our peppery, sharp and lively ryes. These are a few steps that make the taste buds swirl.
