This Fleur de sel comes from a saltworks in the Camargue in the south of France.
It can be recognised by its pinkish colour, due to the concentration of pink micro-shrimps that flamingos in the Camargue feed on. These crystals have the particularity of having a pronounced iodine taste.
Fleur de sel is a finishing salt
put on dishes as a final touch to preserve the nuanced flavours of the salt and its crystalline texture. Fleur de sel is not cooked and should be added off the heat
just before serving.
